From what I know, etoupe is a H classic colour so it will be available mostly every season but etain is a seasonal colour although they seem to keep producing bags in this colour as it is popular. But they can completely stop producing them any time they feel like it.
The Epsom is an embossed leather, not like the Togo, which is natural grain. As such, the leather feels more stiff but it can hold the shape much better. The same color will also looks brighter on the Epsom leather. I've not seen an Etain in Epsom. This color happens to appear in Clemence and Togo more. Etain is less casual and transitions better from day to night. Between etain and black I am not sure. Etain may be easier to wear in the summer, but black is classic.
